Heart Healthy Apple Cake

Time: 1 hour to prep and cook

Yield: one 8-inch square cake

2 cups diced apples
1 cup sugar
⅓ cup oil
½ teaspoon vanilla
1 egg, beaten or 2 egg whites
1½ cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ cup raisins (optional)
Cinnamon and sugar mix (optional)
Confectioner’s sugar (optional)

Grease an 8-inch square pan.

Combine apples and sugar and let it stand for 10 minutes.

Blend oil, vanilla and egg with the apple mixture.

Then combine the dry mix and mix well into the apple mixture. Stir in raisins, if using.

Pour into the prepared pan. Bake at 350 degrees for 35-45 minutes, or until an inserted toothpick comes out cleanly.

Allow to cool completely. Optionally, dust with cinnamon and sugar (while still warms) or with confectioner’s sugar (once cooled).


Notes

The 10-minute resting time is crucial for the apples to release juices; otherwise, the cake will be dry.
